It happens almost every time we buy bananas. One or two will get eaten straight away and then those poor unfortunates are left until they start to freckle and then turn black. Of course, once they start to freckle no one will touch them. So what can you do with overripe bananas?
The great thing about overripe bananas is the intense banana flavor – the just ripe bananas pale in comparison. So overripe bananas are perfect for flavoring and giving texture to smoothies. Delicious with ice cream and milk for banana milkshakes. And in our house, sometimes bananas are left to over-ripen so we can bake with them. Our favorite recipe is a quick and easy Banana Loaf. The recipe makes two loaves, and they can easily be wrapped in plastic wrap and then frozen.
