Spiced Chickpea Dip

  1. 1 14oz (400gm) can chickpeas
  2. 1/4 teaspoon cumin seeds
  3. Pinch of red pepper flakes
  4. 1 clove of garlic
  5. Juice of 1 lemon
  6. Salt and freshly ground black pepper
  7. Extra virgin olive oil
  1. To a mortar and pestle, add the cumin seed and grind until the spice is starting to have a powdery consistenty. Transfer the cumin to the food processor. Add red pepper flakes into the food processor.
  2. Peel and finely chop the garlic. With the tip of your knife flat, rub the garlic firmly until it becomes a paste. Add the garlic to the food processor along with the lemon juice.
  3. Drain chickpeas and place in a food processor with spices and lemon. Pulse until smooth.
  4. Remove mixture and place in a bowl. Add salt and pepper to taste. Add olive oil to loosen the mixture.
  5. Serve at room temperature.
