  1. 2 cups herb leaves - use a single type of herb
  2. 2 cloves chopped garlic
  3. 1/4 cup pinenuts or toasted chopped almonds
  4. 1/2 teaspoon salt
  5. Juice of lime or lemon
  6. 2 tablespoons olive oil
  1. In a food processor, chop herbs and garlic until finely chopped. Add nuts, salt and citrus juice - blend until pureed together. With the food processor running, slowly add the olive oil. The pesto can be refrigerated for up to 2 days or frozen in ice cube trays for up to 2 months.
Pesto Tip
  1. Perfect herbs for pesto are basil, cilantro, mint, dill, or oregano.
Good To Know Tip
  1. For added flavor, try adding freshly grated ginger.

  1. Use pesto as the basis for marinades and salad dressings or as an accompaniment to meat and fish dishes.
