Oatmeal Raisin Cookies

These delicious cookies are perfect for nibbling on warm straight from the oven or cold – a perfect mid-afternoon snack.

  1. 1/2 cup room temperature butter
  2. 3/4 cup firmly pack dark brown sugar
  3. 1/2 cup granulated sugar
  4. 2 eggs
  5. 1 teaspoon vanilla
  6. 1-1/2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1/4 teaspoon ground cinnamon
  9. 1/2 teaspoon salt
  10. 3 cups quick oats (uncooked)
  11. 1 cup golden raisins
  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, add the butter and both types of sugar. Beat on a medium speed until the mixture lightens in color. Add the eggs one at a time to the butter mixture, combining well. Scrape down the sides of the bowl with a spatula. Add the vanilla to the butter mixture and combine well.
  3. In a medium bowl, add the flour, baking soda, cinnamon, and salt. Stir with a whisk. Add the flour mixture to the butter and egg mixture. Mix well either by hand or using the mixer.
  4. Add the oats and raisins to the butter and egg mixture. Mix by hand using a spatula until well combined.
  5. Place rounded tablespoons of the cookie dough on ungreased cookie sheets.
  6. Place cookie sheets in the center of the oven and bake cookies for 10 to 12 minutes until golden brown. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
In the Know Tip
  1. If you're adding flour to a wet mixture in a mixer, quickly turn the mixer on and then off a few times to get the mixture dampened. This will stop you getting covered in clouds of flour.
