These are super easy and super yummy nibbles to serve with drinks.

  1. 1 sheet store-bought Puff Pastry*
  2. Basil Pesto - store bought
  3. Fresh mozzarella
  4. Cherry tomatoes
  5. *If frozen, defrost as per the packet instructions
  1. Preheat the oven to 400 degrees F.
  2. Unfold the pastry and flatten gently with a rolling pin on a lightly floured bench or large chopping board.
  3. Using a knife or a pizza cutter, cut 3-inch strips vertically and then cut 3-inch strips horizontally so you have 3-inch squares. Transfer the squares to a cookie sheet with a half inch gap between each of the squares. Don't be tempted to make the squares smaller, they do shrink when baked.
  4. Spread about a teaspoon of pesto on to each square and spread out cover most of the square.
  5. Slice thin slices of mozzarella and lay a piece onto each square.
  6. Thinly slice the tomatoes and place a single tomato slice on top of the mozzarella on top of each pastry square.
  7. Bake for 10 to 15 minutes. Remove from the oven and allow to cool on a wire rack for 5 minutes before transferring to a platter for serving.
Prep Tip
  1. Place the mozzarella in the freezer for about 20 minutes before you slice it - it makes it easier to slice. Use a knife with a serrated edge.
